
Pad Thai with Kuzukiri Glass Noodles

A gluten-free twist on Thailand's national dish using crystal-clear kuzukiri noodles.
## Ingredients
- BIF Kuzukiri Noodles: 100g
- Shrimp or tofu: 150g
- Egg: 2
- Bean sprouts: 1 cup
- Garlic chives: handful
- Pad Thai sauce: 3 tbsp
- Peanuts, lime, chili
## Instructions
1. Soak kuzukiri in room temperature water 15 minutes. Drain.
2. Wok on high heat. Cook shrimp, push aside. Scramble eggs.
3. Add noodles and sauce. Toss 2-3 minutes.
4. Add bean sprouts and chives. Toss 30 seconds.
5. Serve with peanuts, lime, chili.
## Tips
- Kuzukiri noodles are gluten-free with a beautiful translucent look.
- High heat, fast cooking — they turn mushy if overcooked.
