
Kanom Krok — Thai Coconut Pancakes

Thailand's iconic street snack — crispy-edged mini pancakes with a soft coconut custard center.
## Ingredients
- Jade Leaf Kanom Krok Flour: 200g
- Coconut milk: 300ml
- Water: 100ml
- Sugar: 2 tbsp
- Salt: ½ tsp
- Toppings: sweet corn, green onions, taro
## Instructions
1. Mix the flour with coconut milk, water, sugar, and salt. Stir until smooth. Rest 10 minutes.
2. Heat a kanom krok pan over medium heat. Brush each well with oil.
3. Pour batter ¾ full. Add toppings to half the pancakes.
4. Cover and cook 3-4 minutes until edges are crispy and golden.
5. Remove and pair a plain half with a topped half.
## Tips
- The pan must be hot before pouring — test with a drop of water.
- Sweet corn + green onion is the classic topping combo.
