Gluten-Free Chocolate Cake

A rich, moist chocolate cake made with rice flour — no one will believe it's gluten-free.

## Ingredients - Jade Leaf Rice Flour: 150g - Cocoa powder: 50g - Sugar: 200g - Eggs: 3 - Butter (melted): 100g - Milk: 120ml - Baking powder: 1½ tsp - Vanilla extract: 1 tsp ## Instructions 1. Preheat oven to 170°C. Grease a 20cm cake pan. 2. Whisk rice flour, cocoa, baking powder, and salt together. 3. Beat eggs and sugar until fluffy. Fold in butter, milk, and vanilla. 4. Gently fold in dry ingredients until just combined. 5. Pour into pan and bake 30-35 minutes until a skewer comes out clean. ## Tips - Rice flour gives a wonderfully moist crumb. - Top with ganache (cream + dark chocolate) for extra richness.
